Preparation of crocin nanocomplex in order to increase its physical stability

چکیده

Crocin has a good effect on variety of diseases the central nervous system and cardiovascular system. This study investigated effects addition soybean soluble polysaccharide (SSPS) avenin compound properties stability crocin under acidic (pH 2.5) neutral 7.0) conditions. The SSPS can increase encapsulation efficiency (EE) loading amount (LA) for conditions pH 2.5 7.0, respectively, thus achieving better embedding effect. And ?-potentials nanocomplexes were also increased from ?20.2 mV to ?35.3 mV. According change peak value in fluorescence spectrum, combined by hydrophobic force. Through experiment, it be concluded that improve thermal conditions, thereby protecting structural crocin, providing theoretical support application beverages.
